Potato Brunch Bake

Ingredients

16 ozs pork sausage or ground pork

1/2 cup chopped green bell pepper

1 pkg shredded Simply Potatoes

2 cups shredded jack & cheddar cheese

4 eggs

1 cup milk

1 tomato chopped

Directions

Heat oven to 350 and spray an 8" baking dish with Pam. In a large skillet cook sausage and bell pepper til brown. Drain.
Layer half the potatoes, half sausage and 3/4 c cheese. Repeat.
Combine eggs and milk and beat well. Pour evenly over mixture, press lightly, cover and bake 45 minutes.
Uncover and sprinkle with tomato and remaining cheese. Bake 10-15 minutes longer, or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

For 9"x13" pan, double and increase baking time 5-10 minutes.
